We begin the day with a relaxed and delicious breakfast featuring local products and fresh eggs from our organic chickens.

After breakfast, we explore the surrounding area, hiking or driving into the neighboring hills. Depending on the season and weather, these hills offer phenomenal views of the entire Pyrenees mountain range – from the Mediterranean Sea to the Atlantic Ocean.

For lunch, we enjoy a light meal at Château Lesteous, as we have a gourmet dinner planned for the evening in a small Pyrenean village. We enjoy some free time after lunch in the park or at the château.

In the early afternoon, we head into the mountains to visit a mohair goat farm. This small farm processes the mohair wool on-site into sweaters, hats, scarves, throws, and much more. Mohair is a natural insulator, protecting against both heat and cold. Mohair is an exceptionally lightweight hollow fiber that perfectly regulates moisture: it can absorb up to 30 percent of its own weight in water without feeling wet. We'll take part in a one-hour guided tour that will introduce us to the secrets of this supple wool and the unique characteristics of mohair goats and their breeding. Next door, a small manufactory produces Pyrenean cheese – a true culinary experience.

In the evening, a table is reserved at one of the Pyrenees' most outstanding restaurants, also featured in the 2026 Michelin Guide. Regional flavors are paired with the most exquisite wines from the restaurant's superb cellar. The excellent cuisine is inspired by the seasons and collaborates with the best regional producers to create both modern and traditional dishes. Black Bigorre pork, Pyrenean lamb, trout from a Pyrenean lake, Pyrenean cheese, black Astarac Bigorre poultry, fish caught in France, and much more.

Look forward to an exceptional culinary experience! After dinner, we will return to Château Lestéous and end the day with good conversation over fine wine and drinks.
