We begin the day again with a delicious breakfast featuring local products and fresh eggs from our organic chickens.
After breakfast, we travel to Pau in an air-conditioned minibus.
Pau is the capital of Béarn, a royal city where Henry IV was born. We park at the train station and from there take the Funiculaire de Pau, the historic 105-meter-long funicular railway, up to the Boulevard des Pyrénées, thirty meters higher, offering magnificent mountain views.
We visit the Château de Pau, birthplace of Henry IV and second residence of Louis Philippe I.
After a stroll through Pau's old town, we drive to the nearby Jurançon wine region. There, we have lunch at a small restaurant in the mountains, run by two friends. Both are trained chefs, and one is also a baker and pastry chef. Both have worked in renowned establishments in France, Spain, and Argentina. Their passion for cooking is palpable and evident in every bite. They cook with regional and seasonal ingredients and the finest local meats, such as wild boar, venison, organic veal or beef, black-footed pig, or dry-aged beef. These dishes are accompanied by delicious Jurançon wines or the finest red wines.
After the meal, we visit a family-run winery that has been producing top-quality Jurançon wines for many years, placing great emphasis on organic production and biodiversity in the vineyards. We taste various wines and vintages and learn about the unique characteristics of this fine wine, which matures in the exceptional microclimate near the Pyrenees and the Atlantic Ocean.
Following this wine experience and cellar tour, we return to Château Lestéous and end the day with delicious Pyrenean cheese, exquisite wine, and good conversation.
